PRIORITY VIOLATION-4-501.111, P: Manual Warewashing Equipment, Hot Water Sanitization Temperatures. Observed that the hot water sanitizing dish machine reached a maximum temperature of 145.9F, measured with a calibrated min/max thermometer. A minimum temperature of 160F is required to properly sanitize wares. Use the 3 comp sink, at the proper sanitizer concentration, to clean all wares until the dish machine is repaired. PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed that the concentration of the sanitizer used to manually wash wares in the 3 comp sink test at less than 150ppm. To properly sanitize wares, the concentration of QAT sanitizer shall be 200ppm to 400ppm. Observed that the sanitizer was not flowing properly through the dispenser line. The PIC will have staff manually mix sanitizer for use in the 3 comp sink until the dispenser is repaired. Ensure that the manually mixed sanitizer is test for the correct concentration. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed that wiping cloths used for food and non-food contact surfaces were being kept in a solution of QAT sanitizer at a concentration of less than 150ppm. Moist cloths used for food and non food contact surfaces shall be kept in a sanitizer solution at the correct concentration, for QAT 200ppm to 400ppm. The PIC said they would address the issue. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed the wiping cloth bucket in the kitchen to have 0ppm of sanitizer. Also observed the wiping cloth bucket next to the back sink to have 0ppm sanitizer. Wiping cloths must be stored in an approved sanitizer at the proper concentration. For the QAT sanitizer in use, the concentration should be 200ppm to 400ppm. An employee refilled 1 of the buckets with sanitizing solution at the time of this inspection.
