Observed Y-valve downstream of the AVB in the mop sink area. Informed PIC that this type of setup is not permitted. PIC disconnected the Y-valve from the faucet. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Corrective Action: Corrected at time of inspection. 5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Addl Notes: Observed an air break where an air gap is required at the ice/soda machine. Informed PIC that an air gap of at least 1 inch is required at all times. Corrective Action: Correct prior to next routine inspection.

Observed the scoop handles in the dry storage bulk bins inside the food product (flours). Informed PIC that the handles need to be kept above the food surface. PIC properly stored the scoops at time of inspection. Suggested getting scoop holders for the dry product to PIC. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.
