Inspector's notes

Observed raw shell egg stored above washed vegetables in the walk-in cooler, also observed raw shrimp stored above cooked pork and ready-to-eat sauces in prep cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Manager re-arranged raw shell egg and raw shrimp according to the food storage chart. Corrective Action: Corrected at time of inspection. This is 2nd Consecutive Violation.

Observed rice noodle soaking at food prep area with internal temperature of 95*F, manager stated the rice noodle was soaked about one hour prior to inspection, observed cooked pork in left side prep cooler but not in the cooling well with internal temperature of 67*F, employee stated the cooked pork was put inside the prep cooler less than one hour prior to inspection. Educated rice noodle soaking in water is a TCS food and all TCS food must be cold holding at 41*F or below at all time. Manager moved the rice noodle and cooked pork in walk-in refrigerator and add ice for fast cooling. Correct By: Corrected At Time Of Inspection
