Two gallons of milk, three boxes of hard boiled eggs, ham, and franks-46-55F in the reach in cooler. PIC voluntarily discarded all items. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection. *Ambient air temperature of the unit was at 41F. Discussed with the PIC about ensuring that there is adequate air flow throughout the unit.

Observed raw shelled eggs in the refrigerator that were not pasteurized and left over scrambled eggs in a container from breakfast. Per the cook the eggs were used to make scrambled eggs. Discussed with cook that pasteurized eggs must be used to make scrambled eggs. Corrective Action: Corrected at time of inspection.

Observed chlorine being used as sanitizer with no test strips present. Discussed the importance of being able to test the concentration of sanitizer with cook. Notified person in charge and they ordered test strips and provided invoice. Corrective Action: Corrected at time of inspection.
