Observed 53°F-59°F internal temperature range, per probe thermometer, of hot dogs, roller grill tornados, breakfast sandwiches, milk, creamer, and cheese inside walk-in cooler. Person in charge (PIC) stated listed TCS foods, (see embargo list), were placed into walk-in cooler days prior to inspection and last confirmed temperature check of walk-in cooler was 2am day of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All TCS foods (see embargo list) improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 58.1°F ambient air temperature, per min/max thermometer, inside walk-in cooler. Per PIC, walk-in cooler was holding at 41°F at 2am day of inspection and did not have any further confirmed temperature checks. Cold holding equipment shall have the capacity to maintain TCS foods at 41°F or below. PIC stated plan to use walk-in beer cooler to store and receive TCS foods until walk-in cooler maintains 41°F or below. Beer cooler ambient air temperature observed at 37°F, per min/max thermometer. Establishment shall repair walk-in cooler such that it maintains TCS foods at 41°F or below prior to re-inspection on 2/27/26. Corrective Action: Correct prior to re-inspection.
