Informed PIC of a different procedure to ensure all food contact surfaces are in contact with sanitizer for an appropriate concentration and duration. Facility will use food prep sink in back of establishment to wash dishes, then will use the functional compartments of three comp sink to rinse and sanitize. Ensure all food contact surfaces are submerged in sanitizer solution for 10 seconds (if using chlorine). Correct By: Correct Prior To Next Routine Inspection
