Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed heavy buildup of green organic matter below evaporator fans in small walk-in cooler used for beverages. Observed large amount of specks of black organic matter on ceiling of same walk-in cooler. Discussed with person in charge that walk-in surfaces must be cleaned more frequently to prevent buildup of debris. Please clean walk-in before next routine inspection.
