Calibrated thermometer with manager. Observed multiple TCS foods (such as cheese, shelled eggs, and cooked meats) with internal temperatures ranging from 52°F to 62°F in reach-in cooler in back storage area. Reach-in cooler had ambient air temperature measuring 55.7°F. Per manager, TCS food items have been in unit overnight. Manager discarded items at time of inspection. Ensure all TCS food being maintained by cold holding has an internal temperature of 41°F or below. Correct By: Corrected At Time Of Inspection
