Observed gasket of hot holding box near manager's desk showing signs of compromised integrity due to heat. Discussed the importance of maintaining the gaskets in the control of temperature. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Oven found holding ambient air temperature of 320*f degrees via inspector thermapen. Observed kitchen main hot holding unit at a maximum temperature setting of 200*f degrees. hot unit temperature gauge found holding 160*f degrees. Inspector min/max found unit holding 155*f degrees. Equipment must be maintained accurate with-in its intended range. Corrective Action: Correct prior to next routine inspection.
