Observed in-use convection steamer in kitchen without backflow prevention installed. Per manufacturer's installation guide, this steamer requires a check valve or backflow preventer downstream of the shutoff valve. Please install an ASSE 1013 reduced pressure zone (RPZ) backflow assembly at the water line, with the RPZ assembly being located at least 12 inches higher than the floor drain and a rigid, durable drain line leading to the closest floor sink. Corrective Action: Correct prior to re-inspection. Follow-up is tentatively scheduled for 3/17/2026.

Observed hose attached to floor steamer and resting below the flood rim of the adjacent steamer without a backflow prevention device or air gap. PIC removed the hose at time of inspection.

Observed a hardboiled egg slicer with round, opaque, uniform and circular residue on the food contact surfaces being stored as clean on the drying rack adjacent to the warewashing area. PIC stated that they only use this equipment a twice a week. Discussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed habanero salsa and red salsa prepared in-house at 47-51'F being stored in the salad bar area in the exterior of the kitchen area. Discussed proper cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
