Observed two in-use "mini" size combi ovens with self-cleaning chemicals in kitchen without a reduced pressure principles zone assembly zone (RPZ) at the water supply line. Per manufacturer's installation guide, backflow prevention is required at the water supply line for this equipment. Provided education on backflow requirements for cooking equipment - establishment has active minor remodel permit EHP2502102 for equipment affecting water demand. Please install an ASSE 1013 RPZ backflow preventer at the water supply line for the stacked combi ovens with the drain line for the RPZ leading to the nearest floor drain with a 1-inch air gap with the RPZ being placed at least 12 inches higher than that drain. Observed large soda syrup spill in the soda dispensing room in the back of house. Boxes of to-go cups were being stored directly on top of the spill at time of inspection. Discussed cleaning frequency with PIC. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
