Of note: establishment recently replaced combi-style oven in a 1-for-1 swap with only the existing brass single-check valve installed at the water supply. Prior to next routine inspection, please install an ASSE 1015 reduced pressure zone (RPZ) backflow preventer at the water supply line with a drain line made of rigid, durable material leading to the nearest floor sink. The RPZ unit should be installed at least 12 inches higher than that floor sink. Backflow test report shall be available upon request during next routine inspection.

Observed a large food spill on the floor behind the combi oven. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.
