Inspector's notes

Observed cut tomatoes and shredded lettuce ranging from 44*F to 47*F in the top of the make-line unit. Ambient temperature was 42.8*F using min/max thermometer. Person in charge stated the cut tomatoes and shredded lettuce were in the unit since yesterday. Corrective Action: Corrected at time of inspection.

Employee hands actually being clean and washed when necessary. Gloves are single usage. Need to hand wash in between putting on new gloves.
