Inspector's notes
/Observed RTE meat and chili, roast beef, ham and pastrami stored in the refrigerator without date marks. Per PIC, the deli meats were opened on foods 9/19 and the chili was prepared offsite under the same ownership on 9/20. All RTE/TCS were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed a large accumulation of dust on the overhead fan in the kitchen. Observed a 1/2 inch piece of dust dislodge and land on the cutting board. PIC removed the cutting board for cleaning. Advised PIC to remove fan as all areas cannot easily be cleaned and may cause contamination of food or food contact surfaces with discharge. Corrective Action: Correct prior to next routine inspection.

Advised PIC to leave cheese sauce in the warmer until used or up to 7 days from opening. Discussed reheated cheese needs to reach 165*F for 15 seconds before being held hot at 135*F or above. Keeping cheese sauce hot will reduce the number of times the cheese passes through the danger zone. -Advised PIC to remove the freezer from the walk in cooler and place in the back store room to help air flow in the walk in cooler. Core-4-101.19, C: Nonfood-Contact Surfaces ------- Observed a soft shelf liner used on the racks near the walk in cooler door with visible food debris on them. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. PIC removed material at the time of inspection. Advised PIC to replace with a hard plastic shelf liner that can be easily washed. Correct By: Corrected At Time Of Inspection
Core-6-202.11, C: Light Bulbs, Protective Shielding ------- Observed the light bay in the back kitchen without proper shielding. The PIC indicated that all lights would be properly shielded prior to the next routine inspection. Advised the PIC that all lights must be properly shielded to prevent contamination from broken light pieces. Advised PIC that shatterproof LED lights may also be used in place of glass bulbs.
