PRIORITY VIOLATION-3-501.14, P: Cooling. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. - Partially cooked turkey (100-126*F), cooked pasta noodles (66-80*F), cooked peas (80*F), and stewed tomatoes (78-85*F) found with internal temperatures ranging from 66-126*F; temperatures verified with PIC's and inspector's probe thermometers. All these items were cooked/heated around 12:30 PM today and placed into the walk-in for cooling. All of the items were on covered speed racks and most of the items were also covered in their individual pans with tin foil. Substantial amounts of condensation were observed on the inside of the speed racks covers. The turkey had an additional layer of insulation as it was still in its "cooking package" which it supposed to be heated inside per PIC. Temperatures were taken around 3:15 PM and PIC discarded the food items. Please ensure cooling TCS food items meet required cooling time frames and temperatures. Inspector provided cooling acute guide, methods, and example log to PIC. Correct By: Corrected At Time Of Inspection
