Reviewed date marking and discard requirements with the person in charge: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw bacon stored above open containers of cooked meats. Also observed raw beef stored above boxes of chips and potatoes in walk-in refrigerator. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Person-in-charge (PIC) properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Emailed PIC guidance on storage of raw animal proteins. Corrective Action: Corrected at time of inspection.

Inspector's notes

Shredded cheese in 3 plastic containers found with internal temperatures of 49-51*F; temperatures verified with PIC's and inspector's probe thermometers. PIC stated the cheese had remained in the walk-in since yesterday's portioning of it and had not been brought out. PIC discarded the cheese. The cheese may have failed to properly cool because the containers were stacked, covered, made of plastic, and two of the three pans were about 4" deep. Discussed cooling practices with PIC. Freezer may be used to rapidly cool items before placing them in the walk-in.
