Cooked carrots and cooked pasta in deep covered containers in walk-in cooler measured 59 and 49 degrees F respectively. Person in charge said they had been cooked around 3 hours prior. Carrots were moved to sheet pan and pasta was moved to ice bath to cool more effectively. Please ensure food items are cooled in shallow, uncovered containers to allow for the most efficient heat transfer. Corrective Action: Corrected at time of inspection.

Advisory - follow-up to items from inspection upon request under FD-23-02990 to bring this kitchen up to code in preparation for new adjoining bar, FD-91689. Walked with Mike and Oscar.Most of the items have been corrected. Correct the following items prior to Final for new bar:1) Seal any gaps under bar counter, where underside of bartop meets wall. 2) Repair any openings in the wall – namely around water line under pre-rinse table, small holes in walls. 3) Repair ice buildup noted in walk in freezer.4) For the keg/beer walk in unit, ensure that all items are stored at least 6 inches up off the floor; conduct a deep clean of the floors; provide approved shelving (the wood is not approved, though it could be sealed). 5) At the mop sink area, clean the seal the rusted area of the exterior of walk-in cooler with rustoleum or similar. 6) For the outdoor cooking area, ensure that the hand sink is stocked with handwashing cleanser, hand drying provision and handwashing verbiage.7) Replace the flex tubing drain lines from the glass rinsers in bar with hard pipe. Ensure drain lines are hard-piped, sloped to drain, and do not run across/through any food or beverage items.No County legal action will result from this inspection.Report emailed.
