Inspector's notes
Observed whipped dairy based butter stored at ambient with internal temperature between 73F-53F. The person in charge stated the butter had brought out from the walk in cooler less than an hour ago and placed the butter on time as a control. Observed portioned salsa, cut melons, and butter with internal temperature of 50F-53F in the upper compartment of a prep cooler. The person in charge stated the food items had been stored in the prep cooler for more than 4 hours, the food items were embargoed at the time of inspection.

Observed tuna salad in the walk in cooler with internal temperature of 54F -58F. The tuna salad was packed into deep 6-8 inch containers tightly sealed with plastic wrapping and stacked on top of each other. The person in charge stated the tuna salad had been prepared about an hour ago as indicated by the time stamped label on the containers. The person in charge then placed the containers into an ice bath and loosened the plastic wrapping for rapid cooling. Discussed cooling methods, when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
