Corrective Action: Corrected at time of inspection. Sliced deli turkey, cooked pasta, house made tuna salad and other items available for service in the walk-in and cook line reach-in marked with 8 day discard without a time stamp. Manager corrected dates on the items to 7 days (prep+6) when a time stamp is not used. The manager stated the computerized date marking system needed to be corrected.

PIC moved employee consumables to the designated area and will retrain on proper eating, drinking, and tobacco use. Corrective Action: Correct prior to next routine inspection.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage ------ Observed knives used with ready to eat foods wiped with a dry towel and placed on the magnetic knife block on the wall in the cook line. All knives had been in use for less than 4 hours. Discussed only washed, rinse and sanitized utensils should be stored on the block to avoid possible contamination. PIC removed the knife and stated the block would be cleaned in place. Advised PIC to store in use knives in a safe place such as on a cutting board. Correct By: Corrected At Time Of Inspection
