There was 0ppm reading for chlorine in the ware wash machine. Person in charge (PIC) replaced the bottle of sanitizer and after some troubleshooting and priming, a reading was observed of 50pmm. PIC will ensure that test strips are being used when ware wash machine is used. Sanitizer shall be used as the final step in dish washing. Corrective Action: Corrected at time of inspection.

Observed various wing sauces including habanero sauce and a sauce containing tomatillos at 48 - 50 Deg. F. in a down refrigerator unit at the line. The unit was holding at 54 deg. The operator was aware that unit was not working and provided documentation that a new unit was scheduled to be delivered. The items were moved to another unit due to only being in the unit for about 2 hours. Instructed the operator to not to use the unit until the new one is installed or this unit is repaired.
