Observed milk at 55F and cold brew coffee at 57F inside the residential style fridge in the coffee area in the patio. Staff moved new items back to the walkin, and embargoed all TCS foods in fridge over 4 hours. Ensure that all TCS foods during cold holding are kept at 41F or less.

Facility had bucket of small butter containers left out on the counter top, and employee said using time as a control. Staff said the foods had been out since 8am (4.5 hours ago) and they leave it out until 2pm when lunch is over, then put back in the fridge. Manager embargoed the food, and wants to change to having out for 1-2 hours, or keeping butter in the bottom fridge area. Ensure that TCS foods are not left out for more than 4 hours, are time stamped, and written policy in place for those foods. Corrective Action: Corrected at time of inspection.
