Raw egg and a small container of recently tenderized raw chicken were in this cooler. Raw chicken was moved. This cooler can only be used to hold raw shelled eggs unless it can hold below 41F.It was discussed that the hot-brined vegetables must be held for no more than 7 days unless a variance is approved. Per the cook, the vegetables go into the walk-in cooler immediately after the brine is added.
