Observed TCS food being held in a walk-in refrigeration unit with an internal temperature of 50-52*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 49*F with a min/max thermometer. Observed large ice build up behind fan, completely covering internal components of fan unit. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Facility will refrain from placing TCS food items in unit until it is repaired to maintain 41*F or less. Correct at once. A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health.

Observed TCS food being held in a walk-in refrigeration unit with an internal temperature of 50-52*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 49*F with a min/max thermometer. Per PIC all food held in unit have been inside unit for greater than 4hrs at time of inspection. TCS food items included raw meats, cooked meats, cut leafy greens, salsas, whole shelled and raw eggs. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Inspector's notes
Observed a large pot of beans cooling with an internal temperature of 61*F. Internal temperature of food registered with an internal probe thermometer. Per PIC the beans were placed in the walk-in for cooling at 2am at the end of the last shift. At time of inspection, beans were outside the 6hr time window for cooling and had yet to reach 41*F. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Educated PIC on cooling methods and provided educational handouts. Corrected at time of inspection.
