Observed caulking around the handwashing sink at the end of the cookline to be missing, cracked, or degraded, rendering the area neither smooth, nor easily cleanable. Also observed the faucet on the same handwashing sink needing replacement, as the rust ate away part of the faucet base and sink basin. Discussed repair timeline with PIC. Repair/replace prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. 6-201.11 - Core: Floors, Walls and Ceilings-Cleanability Addl Notes: Observed broken tiles and missing tile grout at multiple areas throughout the kitchen. Employee observed taking dirty dishes to the 3 compartment sink, same employee then used their cell phone, then began to switch gloves before returning to the cook line. The employee was asked to remove gloves and wash hands. Another employee observed texting then began to make a customer drink. The employee was asked to remove gloves and wash hands. Both employees were observed properly washing hands before continuing with work. Per FDA Food Code 2017, food employees must wash their hands after any activity which may result in contamination of the hands. Switching gloves only is not sufficient. Discussed examples of when to wash hands. Corrective Action: Corrected at time of inspection.

Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. There were dishes being washed at time of inspection. PIC made several attempts to prime the dishwasher, each time, there was 0ppm of chlorine after final rinse. PIC called for service at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is fixed. Corrective Action: Corrected at time of inspection.

Upon time of inspection, observed an employee with long artificial nails working with exposed/ready to eat food without gloves on. The employee was bagging ready to eat food items like corn dogs and chicken strips for customers. PIC instructed the employee to wear gloves. The employee was observed washing hands and putting on clean gloves. Unless wearing intact gloves in good repair, a FOOD EMPLOYEE may not wear fingernail polish or artificial fingernails when working with exposed FOOD. Corrective Action: Corrected at time of inspection.

PIC primed the dishwasher, changed the chlorine bottle feeding the dishwasher and there was still 0ppm of chlorine after final rinse. PIC called for service at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is fixed. A sanitizer solution was set-up at 3 compartment sink. The quat dispenser at 3 compartment sink was dispensing proper quat concentration between 200-400ppm and test strips were available.
