Observed reach in unit holding condiments and dairy products fluctuating ambient temperature between 42-48*F. Foods at a temperature of 40-43*F. Person in charge to place work order and place TCS foods in neighboring units. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.

Cooked chicken observed cooling in a 200 pan sealed with saran wrap and tin foil inside walk-in cooler. The pan was vented at time of inspection to facilitate rapid cooling. Discussed the importance of air circulation when cooling, also discussed cooling parameters.

Establishment uses a prep and print machine to print their date marking labels and PIC stated that they cannot manually change the pre-set date. Items like shredded American cheese and sliced American cheese have a 13 day shelf life and 30-day shelf life respectively. These products must have a 7day shelf life per FDA food code 3-501.17, Pf – Ready-To-Eat TCS food, Date Marking• TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1.

PIC placed the dirty can opener at the three compartment sink for it to be washed, rinsed, and sanitized.
