Observed surface temperatures of TCS items such as seafood and ground meat products between 45*F-52*F per inspectors thermometer and establishments thermometer at the time of inspection. Observed internal temperature of raw pork sausage 46*F in cold case at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, establishment checked temperatures about 4 hours ago and product was below 41*F. It was discovered the unit was in defrost cycle and internal temperatures of TCS product rose above 41*F. Per calibrated min/max thermometer, the cold case dropped down to 39.1*F at the time of inspection. PIC is placing work order for equipment. Corrective Action: Corrected at time of inspection.

Observed build up of food debris along the tracks of the sliding doors on meat case at the time of inspection. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Observed that the plastic meat trays had broken edges exposing the metal frame which allows food debris to enter the tray itself where it cannot be properly cleaned and sanitized. Food-Contact Surfaces- Cleanability; Smooth, Easily Cleanable Surfaces shall be: smooth; free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; free of sharp internal angles, corners, and crevices. Trays should be replaced. The PIC stated that they would replace the broken trays. Will reinspect within 10 days. Electronic submission of proof of violation correction may be submitted by email.
