Core-3-307.11, C: Miscellaneous Sources of Contamination Observed two glass containers of previously melted chocolate, stored for future use, uncovered a lower storage shelf in the bakery. Food shall be protected from all sources of contamination. Food should be stored in covered containers to protect from contamination.
