Standing glass door customer self-service cooler holding time/temperature control foods such as cheese and milk items at 51 F. Ice covering cooling unit. Instructed person in charge to discard all out of temperature time/temperature control foods, reviewed how to check thermometer calibration using ice water at 32 F and to not use unit until unit is maintained so as to hold at 41 F or less.
