10:15 am -Mash potato, marinara with meatballs and chili temping at 107 - 120 *F in hot hold steam well. As per cook reheated this morning on stove and placed in hot well one hour prior. Water well temperature is 154 *F. 10:40 am- water well temperature is 157* F. No change in product temperatures. All product reheated at inspection to over 165 *F. Reviewed reheating, hot holding and how to check thermometer calibration using ice water at 32 *F.
