Observed chicken and another TCS animal product thawing in stagnant water. All foods being thawed from frozen must be thawed in an approved manner. Observed TCS food items above 41*F in the cold holding unit next to hot holding. Upon questioning, person in charge (PIC) stated they had been in the unit since before shift started at 6am. Inspection took place at 10:30am. TSC foods include roast beef (52*F), shredded cheese (50*F), sliced cheese (48*-50*F), salami (52*F), soft bacon (51*F), tuna salad (51*F), steak (49*F), and sliced tomatoes (45*F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cold holding unit have an ambient temp of 56*-59*F. Digital thermometer display on unit read 48-50*F. Unit located close to hold holding. Staff frequently use this unit to serve customers. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Instructed staff to have ice under all TSC foods and regularly check temps of TCS foods until unit is repaired. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 2/7/2025
