Observed cooked red sauce in 5 gallon bucket in main walk in fridge with an internal temperature of 44F. Person in charge states that item was cooked last night around 10PM or 11PM. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed rice and refried beans in hot well both registering an internal temperature of 120°F. Per chef, he had recently placed the food items into the hot well from the walk in cooler. The establishment shall reheat their beans and rice to 165° for 15 seconds before holding them hot for later serving. The chef, reheated the food items at time of inspection. The establishment shall make their chlorine sanitizer buckets at a concentration between 50-100ppm and use test strips to verify concentration.
