Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge (PIC) was unable to produce a valid certified food protection manager certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Provide a CFPM onsite by next routine inspection. Observed dried food debris and residue collecting in the basins of both designated hand sinks at time of inspection. Discussed the importance of not dumping food or liquids inside hand sinks with PIC. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Correct prior to next routine inspection.

Observed caulking at hand sink next to the manager's desk to be missing, cracked or otherwise degraded, rendering the area neither smooth, nor easily cleanable. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Physical facility must be maintained in good repair at all times. Observed open beverage can and opened Gatorade with lid located in the bottom part of prep fridge. Person in charge (PIC) stated drinks are for employees and were moved. Opened can was then found under pizza cutting table on shelf that holds pizza boxes. PIC moved open beverage to a designated area. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. Corrective Action: Corrected at time of inspection.

It is known that wet hands transfer bacteria more readily than dry hands. The residual moisture found on the hands after washing allows for bacterial and viral transfer to food or solid surfaces by touch.
