Observed sliced deli meats in cold holding unit on grill line with an internal temperature of 52*F. Person in charge stated foods were freshly sliced within one hour of inspcetion and was actively cooling. Foods should be cooling in equipment designated for cooling. Observed mechanical warewashing machine run several cycles with dirty dishes and produce a chlorine strength of 0ppm. Unit should produce a strength of at 50-100ppm every time for proper sanitation. Person in charge primed unit and mechanical warewashing unit was able to produce a consistent strength of 50-100ppm after several cycles. Per PIC, the unit was stocked less than an hour prior to inspection in preparation for dinner. The ambient temperature of the unit was 50*F at time of inspection (Per thermometer inside the unit). PIC relocated products mentioned above back to the walk-in cooler where they were later observed at 42-44*F and dropping. PIC implemented time as a control from products that were brought out for dinner service and stated that all will be discarded after service. PIC called a service company to get unit repaired and advised staff to use ice baths and time as a control until unit is fixed. Corrective Action: Corrected at time of inspection.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence ---- Observed rodent droppings in dry storage area where canned goods are stored and also in room where flour and other shelf stable items are stored. There was a significant decrease in droppings since 10 days ago when inspector responded to a pest complaint at the establishment. Staff stated that they have increased cleaning frequency and now have the pest control applicator coming every week to clean out traps. Additionally, the pest control applicator is now using bait (for two week now) in all traps located outside of the kitchen, per PIC. The pest control log only had dates of visits and no description of observations or work completed during the visit. There will be a re-inspection within 10 business days.
