Inspector's notes

Observed cooked eggs being cooled inside a sealed Tupperware container. Per PIC all eggs were cooked less than 2hrs prior to inspection. Internal temp registered 70*F with an internal probe thermometer. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrected at time of inspection.

Plumbing Inspection - E&D Class 2This inspection was conducted with the owner.A PDF copy of this inspection report was emailed to Trenda A. at the time of this inspection.No county legal action will result from this inspection.Correct the following items prior to final permit approval;1. There is currently a brass fitting and copper piping on the downstream side of the RPZ backflow prevention device for the RO system. All piping and fittings on the downstream side of this device must be plastic or stainless steel, no copper or brass.2. There are currently flex drain pipes installed for the Coffee tap waste and for the ice machine in the back. All of these drain pipes run along the floor. Provide hard, PVC type drain pipes that empty into floor sinks with minimum 1 in. air-gaps between the ends of the drain pipes and the flood rim of the floor sinks that they drain into.3. Provide a sneeze guard with side panels around the rinse sink, cappuccino machine and flavor bottes installed on the front service counter.4, Provide a minimum of a semi-gloss paint finish to all exposed bare wood on the undersides of the countertops. Also, caulk and seal any spaces between the underside of the countertops and the supporting walls underneath.5. Provide minimum 1 in. air-gaps between the ends of all drain pipes and the flood rims of the floor sinks and mop sink that they drain into.6. Provide a self-closer for the restroom door.7. Seal all loose vinyl cove base to the floor/wall junctures in the restroom and kitchen areas.
