In the expediting area, observed a large pot of various cooked vegetables at 81*F. Pot was stored at ambient temperature. Per chef, vegetables were cooked about 1.5 hours prior. Inspector instructed chefs to rapidly cool the product to attempt to get the foods below 70*F within the first 2 hours of cooling. Once it was 2 hours of cooling the foods were still at 75-80*F.
