Inspector's notes

Observed chemical sanitizing dish machine that tested 0ppm with chlorine test strips. After several cycles and several minutes of priming the machine the result was still 0ppm. The person in charge called for service at time of inspection. Staff was instructed to use 3 compartment sink until repairs could be made. Discussed with the person in charge that the chemical dish machine should test between 50-100ppm. Corrective Action: Corrected at time of inspection.

Due to the violations noted on this inspection report, County legal action may result from this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Permitted establishment has not changed owners, but has undergone a name change and is now doing business as Old Town Tavern. Permit holder has begun construction work on an adjacent suite with the intention of combining both suites into one establishment. Suite under construction contains a functional walk-in cooler that is in use and an bar. The bar is currently unfinished and not in use, but includes water supply pipes, wastewater pipes, and two floor sinks. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.

Observed build-up occurring in the soda gun holders in the bar. Please increase deep cleaning and sanitizing frequency to prevent build-up. The PIC had the holders cleaned and sanitized. Corrective Action: Corrected at time of inspection. Corrective Action: Corrected at time of inspection.

Menu now includes meatballs, marinara, and pork that is reheated for hot holding and cooled for use the next day. Sauteed onions, burgers, and wings are cooked or reheated and then cooled back down for cold holding.Establishment will be increased from a class 3 to a class 4. This will be reflected on the next billing cycle.
