Sausage, cut tomatoes, cheese, and butter in prep top cooler measured 49-54 degrees F internally during inspection. Items had been stocked less than 2 hours prior and were moved back to walk-in cooler at time. Replacement items will be packed with ice until cooler can be serviced. Please ensure all time/temperature controlled for safety food items are maintained at 41 degrees F or below when cold holding. Corrective Action: Corrected at time of inspection.
