Observed high-temp dish washer with a final rinse temperature of 157'F via min/max thermometer being used to conduct warewashing activities at time of inspection. PIC ran the machine again and the temperature dropped to 152.4'F. PIC will discontinue use of the high-temp dishwasher and use the 3-comp sink for warewashing until repairs are made and unit is capable of operating at a minimum temperature of 160'F. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Establishment to continue controlling and monitoring pests until 6-501.111 (A-B, D) - Core: Controlling Pests; Monitoring Predefined Comment: Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection.
