Folded eggs being heated on the grill for hot holding were heated to from 40°F to 73°F. Per cook frozen folded eggs had been put on the grill in error. The eggs were discarded, as per the establishment's policy and and new batch reheated. These all were heated to a temperature greater than 135°F. Corrective Action: Corrected at time of inspection.
