Inspector's notes

Observed large containers of chicken marinade and thai marinade labeled with "keep refrigerated after opening" in the meat processing room with an internal temperature of 47*F measured with a probing thermometer. Per Person in Charge (PIC) the 2 large marinades were opened and placed there more than 4 hours prior to inspection. Embargoed the marinades and PIC voluntarily discarded at time of inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
