Provided vendor information to inspector supervisor for review of sushi sold in establishment. Ensure all employees working with food obtain food worker certification from ANSI certified online site.

On sales floor, in wall cold case, bagged cooked chickens with internal temperatures of 48*F-55*F. Per employees, chickens were placed out for service >4 hours. Bagged cooked chickens were discarded. See embargo form. Ambient temperature of wall cold case was <40*F and other TCS foods were within normal temperatures. Discussed over-filling of shelves to maintain proper air flow. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
