Observed high temperature dish machine that measured 135*F- 140*F with inspector min/max thermometer. After several attempts the person in charge called for service at time of inspection. Discussed with the person in charge that a high temperature dish machine should measure 160*F or higher when properly sanitizing. Corrective Action: Corrected at time of inspection.
