Hot hold unit holding time temperature control foods such as chicken strips, wedge fries, baked chicken at 109-128*F. As per employee tenders were placed in unit at 7:30 am. Instructed employee to discard all out of temperature time temperature control foods, not to use unit until verify unit can hot hold at 135 *F or greater and how to check thermometer calibration using ice water at 32*F.
