Observed main kitchen walk-in fridge un dated items, salsa, red meatballs, hash. Taco meat mislabeled 12/6. Items were voluntarily removed and discarded by kitchen manager instead of being re labeled. All items needing date marks need to be labeled in 24 hours of prep.

Observed sliced cheese, sliced ham, cut tomatoes, cut lettuce, humus on service line holding 55-46*f degrees. Cold holding log is maintained by staff and registered time and temp of product pulled from walk-in at 10am. lunch ended every shift at 12:30pm. Staff is attempting to practice time as a control with no policy in place with items listed or labeled discard times. All items voluntarily discarded at 12:30pm after service was over by staff. Observed reach-in unit holding pepper jack block, sliced turkey and cut lettuce holding 45-47*f degrees. Items set in appropriate location to cool. Unit verified holding 39*f degrees with min/max thermometer.
