Inspector's notes

Observed chicken taquitos with an internal temperature of 55°F, steak and cheese taquitos with an internal temperature of 54°F, Hot dogs with an internal temperature of 50°F, and chipotle chicken taquitos with an internal temperature of 55°F in a cold holding unit with an ambient air temperature of 60°F. PIC stated they had been in the unit for at least two days. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the sink faucet in the only restroom to be connected to a water line attached to a portable AC unit. Sink was not able to be used while connection was in place. No backflow was present. PIC removed the attachment so that the sink is now useable. When connecting a water line to a portable AC unit a proper water line and backflow should be utilized. Corrective Action: Corrected at time of inspection.
