Observed dishwasher in kitchen as well as dishwasher in bar area testing 0ppm chlorine sanitizer. PIC fixed both dish machines so that they tested the appropriate amount of sanitizer. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed shredded cheddar and mozzarella cheese as well as garlic sauce containing buttermilk, sausage, and sliced ham in prep cooler drawers with an internal temperature of 48°F, 60°F, and 46°F respectively. Left min/max thermometer in drawer of prep cooler for around ten minutes and lowest temperature recorded was 50.3°F. Placed min/max thermometer in another drawer and the minimum temperature recorded was 45.5°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Sausage, garlic sauce, and sliced ham were date marked 4/15 and were discarded by PIC at time of inspection. Shredded cheeses had been placed in drawers two hours prior to inspection and were placed in walk-in to rapidly cool. Corrective Action: Corrected at time of inspection.
