Items must be date marked within 24 hours of opening and discarded after 7 days including the day it was made. PIC stated all milks opened at the time had been opened within 24 hours from time of inspection. Also discussed removing old date marks from containers before they are washed. Observed a delivery take place that included frozen foods that were left in walk-in by the person making the delivery. Some items in delivery were at 50°F. No temperatures were taken of the delivery by employees. Discussed with PIC about enforcing preexisting precautions for deliveries.

Inspector's notes

Observed chemicals such as glass cleaner being stored above establishment's handwashing sink. Chemicals must be stored away from food, utensils, and single service items as well as not above sanitary environments at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk-in at an ambient temperature of 57.4°F upon arrival to inspection. PIC stated the walk in had been propped open while moving crates out. A delivery was received at time of inspection where the walk-in was propped open for an estimated additional 20 minutes. Internal temperature of multiple milk containers inside walk in was 53°F. Internal temperature of sausage and cheese sandwiches was 56°F. The walk-in was left closed for remainder of inspection and min/max thermometer read 42°F after an hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Educated PIC on importance of keeping walk-in closed so it is able to maintain a 41°F temperature. Corrective Action: Corrected at time of inspection.
