Observed multiple 5 clean hot trays with yellow and visible brown organic matter build up. Also obsered many 8 large stainless steel pans with yellow, white, brown, black organic matter visible. Notified Person In Charge (PIC). PIC will have employees rewash, rinse, and sanitize. ====Clean to sight and touch. Corrective Action: Corrected at time of inspection.

Observed tray with cooked chicken tenders with internal temperature of 86*F. Notified Person In Charge (PIC). Per PIC the unit is not on and unknown amount of time food was placed into inoperable hot holding unit. PIC decided to discard improperly hot holding cooked chicken tenders. === Corrective Action: Corrected at time of inspection.
