Observed container of cut lettuce for salads in lettuce chiller above prep cooler at 47-52*F. Per employees, lettuce had been placed in cooler within the last hour and was placed into walk-in cooler to bring to 41*F before use. Lettuce chiller was also defrosted and will be serviced before being used again. Ensure all TCS foods are kept at 41*F or below. Correct By: Corrected At Time Of Inspection
