Predefined Comment: Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Predefined Comment: RTE food that was contacted by bare hands was discarded by PIC at time of inspection. The person in charge instructed the chef to utilize nearby scoop/ spoons to handling ready to eat foods. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods had been in the prep cooler shortly before opening around 11:30AM. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed the minimum temperature of the bottom section of the prep cooler at 53.6°F with inspector's min/max thermometer. Instructed person in charge to discontinued using the prep cooler until it is serviced and maintains TCS foods at 41°F or less. Corrective Action: Corrected at time of inspection.

At time of the inspection the prep refrigerator used to store TCS foods next to the stove did not have a thermometer in it to monitor the ambient temperature. Any refrigerator or freezer, storing Time/Temperature control for safety food, shall have a thermometer that is readily accessible and located in an inconspicuous place. Operator will place one in the unit before the next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed an unshielded light bulb on the ventilation hood wall above a tray of bread stored on top of the pizza oven. Light bulbs that are shielded, coated, or otherwise shatter-resistant are necessary to protect exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles from glass fragments should the bulb break. After discussion with the person in charge it was determined the light was replaced earlier today. Person in charge re-installed the shatter resistant light bulb cover at time of inspection. Corrective Action: Corrected at time of inspection.
